Instructions

  1. Prepare the Cheesecake Filling: Beat 8 oz cream cheese with 1/4 cup granulated sugar and 1 teaspoon vanilla extract until smooth. Set aside.
  2. Make the Cookie Dough: Cream 1 cup butter with 1 cup granulated sugar and 1 cup brown sugar until light and fluffy. Add 2 eggs and 2 teaspoons vanilla extract, beating well. Mix in 3 cups flour, 1 teaspoon baking soda, and 1/2 teaspoon salt. Fold in 2 cups chocolate chips.
  3. Assemble the Cookies: Preheat oven to 350°F (175°C). Scoop and flatten a tablespoon of dough, add a teaspoon of cheesecake filling, then cover with another tablespoon of dough. Seal edges and place on a baking sheet lined with parchment paper.
  4. Bake the Cookies: Bake for 12-15 minutes until edges are golden. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
